Ingredients

Ingredients:

For the Falafel:

  • 2 cups canned chickpeas, drained and rinsed
  • 1 small onion, roughly chopped
  • 3 cloves garlic, minced
  • 1 cup fresh parsley, chopped
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon baking soda
  • Salt and pepper, to taste
  • 2 tablespoons all-purpose flour
  • Cooking oil, for frying

For the Tahini Sauce:

  • 1/2 cup tahini
  • 2 tablespoons lemon juice
  • 2 tablespoons water
  • 2 tablespoons olive oil
  • 1 clove garlic, minced
  • Salt, to taste

For the Wrap:

  • Whole wheat or regular pita bread
  • Fresh vegetables (lettuce, tomatoes, cucumbers, red onions)
  • Hummus
  • Pickles (optional

Directions

For the Falafel:

  1. In a food processor, combine chickpeas, onion, garlic, parsley, cumin, coriander, baking soda, salt, and pepper. Blend until the mixture forms a coarse paste.
  2. Transfer the mixture to a bowl, add flour, and mix well. The mixture should be able to hold together when shaped into balls.
  3. Form small balls or patties with the mixture and place them on a baking sheet.
  4. Heat oil in a pan over medium heat. Fry the falafel until golden brown on both sides. Place them on a paper towel to absorb excess oil.

For the Tahini Sauce:

  1. In a bowl, whisk together tahini, lemon juice, water, olive oil, minced garlic, and salt. Adjust the consistency by adding more water if needed. Set aside.

Assembling the Wrap:

  1. Warm the pita bread.
  2. Spread a generous spoonful of hummus on the bread.
  3. Place a few falafel balls or patties on the hummus.
  4. Add fresh vegetables such as lettuce, tomatoes, cucumbers, and red onions.
  5. Drizzle with tahini sauce and add pickles if desired.
  6. Fold the sides of the pita over the filling, creating a wrap.
